Vegan, Oil-free, Gluten-free, Flourless
Ingredients:
- 3 cups brown rice crisps cereal (or Rice Krispies or other crisped rice cereal)
- 1 cup almond butter (or other nut or seed butter)
- 1 cup brown rice syrup
- 1/2 tsp vanilla extract
- 1 cup dark vegan chocolate chips
Directions:
- Place the brown rice crisps cereal in a large bowl. Set aside.
- Mix the almond butter and brown rice syrup in a 4-cup Pyrex measuring cup and microwave for 1 minute.
- Add the chocolate chips, stir until they melt completely and the mixture is smooth. If needed, microwave for another 10 seconds.
- Mix the chocolate mixture with the cereal by hand.
- Pinch off about a tablespoon of the mixture and rub it between your palms to form a ball.
Note: Store in an airtight container on the kitchen counter for a couple of days or put in the freezer. Do not refrigerate.
This recipe makes about 32 chewies.
