Vegan Brownies with Chocolate Ganache

Vegan, Oil-free, Gluten-free

Ingredients:

Brownies

  • 1 cup oat flour
  • 1 cup almond flour
  • 3/4 cup coconut sugar
  • 1/2 cup cacao powder
  • 1 Tbsp baking powder
  • 1 Tbsp baking soda
  • 1/2 tsp salt
  • 3/4 cup vegan chocolate chips 
  • 1 cup plant milk (unsweetened)

Chocolate Ganache

  • 3/4 cup plant milk (unsweetened)
  • 2 cups vegan chocolate chips 
  • Pinch fine sea salt
  • 1 tsp vanilla extract (optional)  

 

Directions:

Brownies

  1. Preheat the oven to 350 ºF and get your silicone brownie pan ready.
  2. In a large bowl, combine all ingredients except milk.
  3. Then whisk in the milk until smooth. 
  4. Pour the batter into the prepared brownie pan and bake for 25 to 30 minutes until a toothpick inserted into the center comes out clean. Be careful not to overbake them. 
  5. Invert the pan and let the brownies rest while you make the ganache.

Chocolate Ganache

  1. Microwave the milk in a Pyrex cup for 1 minute. 
  2. Add the chocolate, salt and vanilla extract and whisk until all chocolate is melted. If needed, microwave for another 20-30 seconds.
  3. Let the ganache cool down slightly, then pour it over the brownies, cut and enjoy with a nice cup of coffee!
