Chocolate Covered Strawberries

Vegan, Oil-free, Gluten-free, Flourless

Yields: ~15 strawberries

Ingredients:

  • 15 fresh strawberries
  • 1/2 cup dark vegan chocolate chips
  • 1/4 cup vegan white chocolate chips (optional, for drizzle)

Directions:

  1. Prep Strawberries & Workspace
    Wash the strawberries and pat them completely dry with a paper towel (the chocolate won’t stick well if berries are wet). Line a baking sheet with parchment paper.

  2. Melt Dark Chocolate
    Place the dark vegan chocolate chips in a microwave-safe bowl. Microwave on medium power (about 50% if your microwave lets you set power) for 1 minute, then stir. If not fully melted, microwave again in 20–30 second bursts, stirring between each until the chocolate is smooth and fully melted. Stirring between bursts is key to prevent burning.

  3. Dip Strawberries
    Holding each strawberry by the green top, dip it into the melted dark chocolate, swirling to coat about two-thirds of the berry. Let excess chocolate drip off, then place the dipped strawberry on the prepared parchment. Repeat with all strawberries.

  4. Chill to Set
    Place the tray in the refrigerator for about 10–15 minutes, or until the chocolate is firm. (If you’re adding the white chocolate drizzle, set them just until firm enough to drizzle over.)

  5. (Optional) Melt White Chocolate
    In a clean microwave-safe bowl, melt the vegan white chocolate chips using the same technique as in Step 2: 1 minute at medium power, then 20–30 second bursts with stirring until smooth. While the dark chocolate sets, drizzle the white chocolate over the berries with a spoon.

  6. Final Chill
    Return the tray to the fridge for another 10–15 minutes, until the chocolate is fully set.

Serving and Storage:

Serve within 1–2 days for the best texture and flavor. Store in the refrigerator on the parchment-lined tray, loosely covered.

Tips for Success:

  • Dry berries thoroughly — moisture can cause chocolate to seize or not stick.
  • Use short microwave bursts and stir often to prevent burning.
  • If your white chocolate seems thick, heating more gently in short bursts helps smooth it out.
