Chocolate Quinoa Bites

Vegan, Oil-free, Gluten-free, No Added Sugar, No-bake

Total: 15 min, Yields: 34 

Ingredients:

  • 1 1/2 cup quinoa, cooked
  • 1 cup dates, chopped
  • 1/2 cup almond butter
  • 1/2 cup dark vegan chocolate, either chips or chopped
  • crushed almonds, cocoa powder, or unsweetened shredded coconut for coating, as needed

Instructions:

  1. Soak the chopped dates in hot water for about an hour.
  2. Once soaked, pour out the soaking water and process the dates in a blender. It does not have to be a smooth paste, some pieces are ok.
  3. Add the almond butter to the dates and process again until combined. Scoop into a large bowl. Set aside.
  4. Place the quinoa in a 4-cup Pyrex measuring cup or a microwave-safe container, and microwave for 2 minutes.
  5. Add the chocolate and stir until completely melted. Microwave for another 10 seconds, if needed.
  6. Add the quinoa-chocolate mixture to the date-almond butter paste in the bowl.
  7. Put the cocoa powder, crushed almonds, or coconut for coating into shallow containers.
  8. Scoop out about half a tablespoon of mixture and roll into balls.
  9. Coat and store in the refrigerator or freezer.
