​Pumpkin Pancakes (Waffles)

​Pumpkin Pancakes (Waffles)

Vegan, Oil-free*

Prep: 10 min, Bake: 20-30 min, Total: 40 min, Serves: 4-6  

Ingredients:

  • 2 cups whole-wheat pastry flour
  • 1 Tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups plant milk (unsweetened)
  • 3/4 cup pumpkin purée
  • 5 Tbsps maple syrup
  • 1 tsp vanilla extract
  • fruit to put on top (optional)
  • maple syrup to pour on top (optional)

Instructions:

  1. Preheat your non-stick skillet or waffle maker.
  2. In a large bowl, stir together all dry ingredients (the flour, pumpkin pie spice, baking powder, baking soda and salt). Make a well in the center. Set aside.
  3. Mix all wet ingredients (the plant milk, pumpkin purée, maple syrup and vanilla) in a separate bowl or a blender until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir until well incorporated.
  5. Spoon small amounts of batter onto the heated surface of the skillet or waffle maker. Once done, place your pancakes or waffles on a wire rack and continue cooking until you use up all your batter.
  6. For the Pancakes: Cook the pancakes on one side for about 2 to 3 minutes, then use a spatula, flip them over and cook for an additional minute or so until the other side is golden brown.
  7. For the Waffles: Make sure your waffle maker is completely heated. You don’t need to grease the surface but make sure NOT to open the waffle maker until the batter is cooked through. The cooking time depends on your waffle maker, and it might take 10 or even 15 minutes. If you happen to open the waffle maker too soon, the waffle will break. If that happens, close the waffle maker and wait until the waffle is finished.
  8. Serve with fruit or maple syrup, if you wish.

Notes:

  1. * This is an oil-free recipe, and you will NOT need any oil to grease your non-stick skillet or waffle maker before pouring the batter in. 
  2. These are also delicious with Pumpkin Cashew Frosting.
