Vegan French Toast
Vegan, Oil-free, Gluten-free, No-added Sugar
Prep: 5 min, Cook: 15 min, Total: 20 min, Serves: 4-6
Ingredients:
- 2 cups unsweetened plant milk
- 3 Tbsps dates, chopped
- 1/2 cup almond flour
- 1 Tbsp flaxseed
- 1/8 tsp cinnamon and/or nutmeg
- Dash of turmeric
- 12 slices of gluten-free bread (or whole wheat bread, if gluten is no issue)
Instructions:
- Process all ingredients except the bread in a blender until very smooth. Pour into a shallow dish.
- Preheat a non-stick skillet or frying pan to medium-high.
- Quickly dip bread into the milk mixture and place on the skillet.
- Cook for about 3 minutes on each side or until evenly browned.
- Repeat until all milk mixture has been used up.
- Any leftovers can be stored in the fridge or freezer in individual zip-lock bags. To reheat, microwave each slice for a few seconds or place into the toaster.
