Vegan French Toast

Vegan French Toast

Vegan, Oil-free, Gluten-free, No-added Sugar

Prep: 5 min, Cook: 15 min, Total: 20 min, Serves: 4-6 

Ingredients:

  • 2 cups unsweetened plant milk 
  • 3 Tbsps dates, chopped
  • 1/2 cup almond flour
  • 1 Tbsp flaxseed
  • 1/8 tsp cinnamon and/or nutmeg
  • Dash of turmeric
  • 12 slices of gluten-free bread (or whole wheat bread, if gluten is no issue)

Instructions:

  1. Process all ingredients except the bread in a blender until very smooth. Pour into a shallow dish.
  2. Preheat a non-stick skillet or frying pan to medium-high.
  3. Quickly dip bread into the milk mixture and place on the skillet.
  4. Cook for about 3 minutes on each side or until evenly browned.
  5. Repeat until all milk mixture has been used up.
  6. Any leftovers can be stored in the fridge or freezer in individual zip-lock bags. To reheat, microwave each slice for a few seconds or place into the toaster.
