Chocolate Chip Chickpea Blondies

Vegan, Oil-free, Gluten-free, Flourless

Prep: 10 min, Bake: 25-27 min, Total: 35 min, Serves: 12 

Ingredients:

  • 2 cans chickpeas, rinsed and drained, or 13 cups cooked
  • 1 cup almond butter or peanut
  • 2/3 cup pure maple syrup
  • 1 1/2 Tbsps vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 teaspoon sea salt
  • 2/3 cup vegan chocolate chips, plus extra to sprinkle on top (optional)

Instructions:

  1. Preheat the oven to 350°F.
  2. Line an 8x8-inch pan with parchment paper. Set aside.
  3. In a blender or food processor, add all ingredients except chocolate chips and process until smooth.
  4. Fold in chocolate chips and blend until thoroughly combined.
  5. Spread batter evenly in the prepared pan, sprinkle some chips on top (optional) and bake for 25-27 min or until edges are slightly brown. Do not overbake!
  6. Cool on wire rack.
