Chocolate Covered Blueberries

Chocolate Covered Blueberries

Vegan, Oil-free, Gluten-free, Flourless

Prep: 5 min, Cook: 1 min, Cool: 30 min, Total: 36 min, serves: 7 

Ingredients:

  • 1/2 cup large blueberries (49)
  • 1 cup dark vegan chocolate chips
  • chia seeds for sprinkling (optional)

Instructions:

  1. Place blueberries in "nests" of 7 on waxed paper placed on a cutting board. Set aside.
  2. Microwave chocolate chips in a Pyrex measuring cup for 30 seconds, stir. Microwave again for about 10 seconds and stir until chocolate is completely melted. 
  3. Spoon melted chocolate over blueberry nests and sprinkle with chia seeds, if desired.
  4. Put in the freezer for about an hour or until the chocolate sets. Store in an air-tight container in the fridge for a couple of days or in the freezer for up to 3 months.
