Vegan S'mores Cookies
Vegan, Oil-free, Gluten-free
Prep: 5 min, Bake: 10 min, Total: 15 min, Yields: 12 cookies
Ingredients:
- 1/2 cup GF flour
- 1/3 cup Sucanat
- pinch of salt
- 1/2 cup almond butter
- 4 Tbsps water
- 3 vegan GF graham crackers, crushed
- 1/2 cup vegan chocolate chunks or chips
- 1/2 cup vegan mini marshmallows
Instructions:
- Preheat the oven to 350°F. Cover your baking sheet with parchment paper.
- In a medium bowl, sift together the flour, sugar and salt.
- Stir in the almond butter and water and stir with a spoon until well combined.
- Add the rest of the ingredients (Graham crackers, chocolate chips, marshmallows) and use your hands to create a dough that is sticky enough to form balls.
- Roll dough into 12 equal-sized balls, place on the baking sheet and flatten slightly.
- Bake cookies for 9-10 minutes. Do not overbake.
- Let sit on the cookie sheet for five minutes before transferring to a cookie rack.
