Vegan S'mores Cookies

Vegan S'mores Cookies

Vegan, Oil-free, Gluten-free

Prep: 5 min, Bake: 10 min, Total: 15 min, Yields: 12 cookies

Ingredients:

  • 1/2 cup GF flour
  • 1/3 cup Sucanat
  • pinch of salt
  • 1/2 cup almond butter
  • 4 Tbsps water
  • 3 vegan GF graham crackers, crushed
  • 1/2 cup vegan chocolate chunks or chips  
  • 1/2 cup vegan mini marshmallows

Instructions:

  1. Preheat the oven to 350°F. Cover your baking sheet with parchment paper.
  2. In a medium bowl, sift together the flour, sugar and salt.
  3. Stir in the almond butter and water and stir with a spoon until well combined.
  4. Add the rest of the ingredients (Graham crackers, chocolate chips, marshmallows) and use your hands to create a dough that is sticky enough to form balls.
  5. Roll dough into 12 equal-sized balls, place on the baking sheet and flatten slightly.
  6. Bake cookies for 9-10 minutes. Do not overbake.
  7. Let sit on the cookie sheet for five minutes before transferring to a cookie rack.
