Crispy Chewies

Vegan, Oil-free, Gluten-free, Flourless

  • 3 cups brown rice crisps cereal
  • 1 cup almond butter (or other nut or seed butter)
  • 1 cup brown rice syrup
  • 1/2 tsp vanilla extract
  • 1 cup dark vegan chocolate chips


  1. Place the brown rice crisps cereal in a large bowl. Set aside.
  2. Mix the almond butter and brown rice syrup in a 4-cup Pyrex measuring cup and microwave for 1 minute.
  3. Add the chocolate chips, stir until they melt completely, and the mixture is smooth. If need, microwave for another 10 seconds.
  4. Mix the chocolate mixture with the cereal by hand.
  5. Pinch off about a tablespoon of the mixture and rub it between your palms to form a ball. This recipe makes about 32 chewies.

Note: Store in an airtight container on the kitchen counter for a couple of days or put in the freezer. Do not refrigerate. This recipe makes about 32 chewies.
