Simple Almond Butter Brownies

Vegan, Oil-free, Gluten-free

Prep: 10 min, Bake: 15 min, Total: 25 min, Yields: 16 brownies

Ingredients:

  • 1 cup almond butter
  • 1/2 cup maple syrup
  • 1/2 cup cocoa powder
  • 1/2 cup oat flour
  • 1/4 cup vegan chocolate chips
  • 1/4 cup almond slivers or crushed walnuts (optional)
  • 3/4 cup chocolate chips to put on top (optional) 
  • 1/4 cup almond slivers or crushed walnuts, to sprinkle on top (optional)

Instructions:

  1. Preheat the oven to 325°F. Line an 8x8-inch pan with parchment paper or prepare a silicone brownie pan, set aside.
  2. In a large bowl, stir all ingredients together. 
  3. Press the batter into the prepared pan and bake for 15 minutes. 
  4. Place on a cooling rack and immediately sprinkle the chocolate chips on top.
  5. Return to the oven for 30 seconds and take out again. 
  6. Smooth the melted chocolate chip over the surface.
  7. Sprinkle the nuts on top, if using.
  8. Store brownies in an air-tight container in the fridge for up to 4 days or wrap in foil and freeze for up to 3 months
