Thumbprint Cookies

Vegan, Oil-free, Gluten-free

Prep: 5 min, Bake: 12 min, Total: 17 min, Yields: 20 cookies 


  • 2 1/2 cups oat flour
  • 2 tsps baking powder
  • 1/2 cup almond butter
  • 2/3 cup maple syrup
  • pinch of salt (optional)
  • jam


  1. Preheat oven to 350 °F. Line a baking sheet with parchment paper.
  2. Mix oat flour, baking powder and salt in a large bowl.
  3. Add almond butter and maple syrup, mix until smooth.
  4. Use a 1-tablespoon retractable scoop to drop cookies onto a parchment-lined baking sheet. 
  5. Press the center of each cookie with your thumb or finger to create a small well.
  6. Fill each cookie with about ½ teaspoon of jam.
  7. Bake for 10-12 minutes or until the edges are lightly golden brown. Do not overbake.
  8. Remove cookies from oven, transfer the baking sheet to a cooling rack for a few minutes to cool.
  9. Store in an airtight container for about a week, or in the freezer for up to three months.
